Every year the staff at Allan Block Insurance likes to make their favorite thanksgiving foods and sit down, share a meal together. So this year we wanted to share some of our best recipes for pecan pie, cranberry relish and sweet potato soup. Do you have an amazing family recipe to share with us?
Evelyn’s Southern Pecan Pie
- 1Â Â Â Â Â Â Â Â Â Â Cup Sugar
- ¾         Cup Light Corn Syrup
- ¾         Cup Dark Corn Syrup
- 4Â Â Â Â Â Â Â Â Â Â Eggs
- ¼         Cup Butter
- 1 ½ Tsp    Vanilla
- 2Â Â Â Â Â Â Â Â Â Â Cups Whole Pecans
- 1Â Â Â Â Â Â Â Â Â Â Unbaked Pie Crust
Preheat oven to 350 degrees Fahrenheit.
In saucepan bring the sugar and corn syrup up to a soft boil. Take mixture off of heat. In a large bowl lightly beat eggs and very slowly pour the sugar syrup mixture into the eggs, stirring constantly.
Once fully combined strain the mixture for a smooth and lump free pie. Stir the butter, vanilla and pecans into the still warm mixture. Lightly grease baking dish and place crust into dish. Pour mixture into crust and bake for 45 to 60 minutes (or until set). Pie will be ready when the center of the pie does not wobble.
Nancy’s Cranberry Relish
- 2 Â Cans Whole Berry Cranberry Sauce
- 7oz can Crushed Pineapple
- 1Â 11oz Can Manderin Oranges drained
- 2 stalks celery – diced
- 1Â Tbsp honey
Mix all ingredients and totally enjoy.
George’s Sweet Potato Soup
- 4 Strips      Bacon
- 1Â Â Â Â Â Â Â Â Â Â Â Red Onion (fine chopped)
- 4Â Â Â Â Â Â Â Â Â Â Â Cups Chicken Broth
- 4Â Â Â Â Â Â Â Â Â Â Â Peeled Sweet Potatoes (medium chopped)
- Black Pepper, Salt, Cayenne and Brown Sugar to Taste
Cook bacon and set aside. Cook fine chopped red onion in the grease from the bacon. Add chicken broth to the cooked onion and bring up to a boil. Add the sweet potatoes and bacon to the boiling mixture and reduce temperate to a simmer. Stir the potatoes every couple minutes and cook for 30 to 40 minutes (or until sweet potatoes are tender). Put entire mixture into blender and blend until smooth.
